Vegetable Fried "Rice"
One of my comfort foods is fried rice. I was craving some but I did not have any leftover rice to make the dish. In order to make a good fried rice, you need to use old rice. If you use fresh steamed rice, the grains of rice will stick together and you will end up with mushy, wet fried rice. I had some vegetables in the refrigerator so I decided to improvise and make some "riced" veggies for my fried rice.
It is really simple to "rice" your own vegetables. Just place your vegetables into a food processor and using the pulse button, pulse the vegetables until they resemble small grains of sand. You can use any semi firm vegetables such as broccoli, cauliflower, cabbages, carrots, and or turnips. Just cut the vegetables into florets or smaller chunks before placing them into the food processor.
For my fried rice I used:
- cabbage
- cauliflower
- asparagus
- green beans
- bean sprouts
- scallions
- cilantro
- garlic
- coconut amnios
- garam marsala
- coconut oil
This dish is really easy to put together. You can use any combination of vegetables or just one type and season it with your favorite aromatics. I riced the cabbage and cauliflower with the cilantro. The asparagus, green beans and bean sprouts were cut into smaller pieces. In a hot sauté pan melt some coconut oil and add the scallions and minced garlic. Next went in all of the vegetables and I cooked them for a couple of minutes. I like to keep my vegetables on the crunchy side for texture. To flavor the vegetables I used a touch of garam marsala and a good dose of coconut amnios. Coconut amnios is my new favorite condiment. It is made from coconut sap and has a salty and slightly sweet taste. It is a great replacement for people who can't have soy sauce, it naturally adds sweetness to any dish and there are some health benefits. source
To finish the dish, I topped it with a sunny side egg. When the slightly cooked yolk is broken and mixes with the vegetables, it adds an extra richness to the dish. This meal is low in carbohydrates and all the different veggies added a variety of textures and flavors. It was so good that I might keep making this version over the real fried rice.
