Fish Pie from the Deep Blue
Mama had quite a hectic week behind her, during which she had resorted to fast food, like we all do at times :)
Everything was deep fried and oily; and although very tasty at the time, she decided that the box of frozen hake (a white fish) that’s been waiting patiently in the freezer, would definitely not be used for another oily meal like our favorite fish & chips.
Mama decided to make her famous Creamy Fish pie that oozes with flavors from the deep blue ocean.
She steamed the frozen fish portions (skin removed) in a little salted water with some onion and a small handful of herbs, bay leaves are also nice. Drain the fish and leave to cool a little.
Next thing Mama did was to dice 1 onion, 1 or 2 leeks & 200g Mushrooms.
Mama sauteed the onions and leeks, lastly adding the mushrooms.
Next you will see just how easy this recipe is. Mama measured out 2 cups of Full Cream Milk, reserving a little for the next step, the remaining milk went into the pot with the mushroom mixture.
Mama brought this to the boil, mixed 2 tablespoons cornflour with the reserved milk till smooth, then added this to the milky mixture to thicken and seasoned it to taste.
Next she broke the fish up into chunky bite sizes and added it to the creamy mixture.
She spooned this lovely creamy filling into a buttered ovenproof dish.
Mama made creamy mashed potatoes, using 3 - 4 large Potatoes, and spooned it on top of the fish mixture, dotting it with butter.
Mama finally placed the fish pie under the oven grill till it was golden brown, and served it as a simple light meal with some sweet baby peas.
Mama says you can turn this into a yummy seafood pie by adding shrimps, prawns, mussels or any other shellfish to the filling, or use smoked fish instead of hake; heavenly if you're a seafood lover like Mama, enjoy :)
