The fluffiest pancake I ever had

Ever since I first tried souffle pancakes a few months ago I am hooked on them now. Can you imagine a thick pancake as light as souffle? If not, let me show you a cafe that I went to the other day in Nagoya in Japan called A Happy Cafe.

The first thing you must do when you arrive is it to get a ticket. This is the automatic ticketing machine and I'm 4th in the queue. It says the waiting time is around 12 minutes. Thats not bad.

Next to the ticketing machine is the kitchen window and you can see the staff making the pancakes here. The batter is poured onto the griddle, and both the top and bottom are cooked here before transferred to the oven to be finished off. Each pancake takes about 20 minutes to make, but as always good things are worth the wait.

Luckily I didn't have to wait long for my table, probably about less than 10 minutes which was acceptable. Maybe because it was a weekday and I came after the peak afternoon teatime. I didn't take a photo of the inside of the cafe as it was quite compact and still full with people. I didn't want to offend all the other customers as I understand the Japanese are more reserved people.

Here's the menu. I forgot to take a full view of the menu but the basic pancake starts from ¥1100 which is around USD9.70. Not cheap for pancakes I know, but trust me, they're worth it!!

Now let'get down to business!Here's what me and my party ordered. From top to bottom the basic pancake, Tiramisu, chocolate and banana, and salmon. Which do you think looks most yummylicious?

I've had these pancakes before in Taiwan, and they were really nice. But my boy!!! These were on another level. They were soft but not melting soft like disintegrating in your mouth leaving you with a mush. Instead they had a soft airy bite, every mouthful was an absolute delight. If you ever see them on offer in a cafe, I would highly recommend them!!!

I saw these on a show probably a year or so ago and thought they looked amazing! I am assuming they fold in a lot of egg whites to make them fluffy? Any idea? I'd love to find a place that has them here, but everything in Mexico is very heavy cake like pancakes not nearly as good!

Thats what I heard Lynn, though I haven't seen them the full process on how they make it. The batter certainly looked very fluffy and white.

How are things with you guys?

I may have to give it a whirl one day at home :) LOL I can only imagine how well that will turn out!

We're doing ok; Brian has good and bad days, but always a general sense of malaise and most of the time, pain, unfortunately. Thanks for asking though.
