Beef Nacho Monday
The first 2 days of September weather wise have been impressive, clear sunny skies with temp's in the early 20's.
Been a good start to the month of Solar production which is great to see, yesterday i took advantage of the sunny weather and did 3 x 3.5K walks plus a 2K walk with my partner when she got home.
For Dinner we made Beef nacho's which turned out really nice, i went to the supermarket and got some beef mince corn chips & sour cream.
I did initially think we had some left over nacho mix in the freezer but we must have used it all, so we made the mix and managed to have some leftover to freeze.
The kids have normal baked beans instead of the beef mince mix, on the right is the start with some onion in the frying pan first.
I may have forgot to get pictures as i cooked, after the onions the beef mince got browned then in went the chopped tomatoes plus the chili bean mix.
Here is my Dinner on the right which like i said was pretty nice, now i need to work out what's for dinner tonight.
Could have added more cheese LOL
So that was my semi active Monday and what we had for dinner, i hope your Monday is going fine.
