Kakinoha zushi 柿の葉寿司
お土産で柿の葉寿司をいただきました。
I got a Kakinoha zushi with a souvenir.
Kakinoha zushi refers to sushi wrapped with a persimmon leaf, and is one of the local Japanese dishes in Nara, Wakayama, and Ishikawa Prefectures.
To give good aroma and preservatives, persimmon leaves were used especially for summer time.
Nowadays salmon and snapper are also used instead of mackerel to have more variety.
In NARA region,there are some specialty shops of Kakinoha Sushi.

左から蒸し海老、鯛、鮭です。
I have just finished persimmon leaves. Very fragrant. Steamed shrimp from the left, bream in the sea, salmon.

Kinakomochi, your kakinoha zushi looked delicious. I loved the way it was boxed and in such a lovely way. The food in Japan is wonderful and the rice is so special and perfect. You are very lucky to be able to eat all this wonderful food! Thank-you for sharing!
