These days you find many Jamaican restaurants serve Carrot Juice with Soya milk instead of the traditional sweetened condensed milk, or replace the milk with lime or lemon juice. It does not matter which type of Carrot Juice you like as long as it tastes amazing. Optional garnishes include crushed ice or a single lemon wedge. Ingredients: 5 to 6 large Carrots. 1 can Sweetened condensed milk. 4 to 5 cups water. ½ teaspoon grated Nutmeg . 2½ tablespoons Vanilla flavoring. ½ cup Crushed ice. Lemon wedge. Mint sprig. Directions: Wash the carrots and scrape the skin. Cut into small pieces. Add carrots to blender and add water. Blend the carrots till they form a pulp. Strain this pulp into a container and squeeze out the remaining juice. Add vanilla flavoring and grated nutmeg. Add the sweetened condensed milk as per your taste preferences. Serve in a long glass over crushed ice with optional garnishes. Enjoy in hammock and consider moving to Jamaica. ================================= Spinach and Carrot Supreme Smoothie Recipe (serves 2) Ingredients 2 medium sized cups of chopped spinach 1 medium sized cup of chopped carrots 1 medium sized cup of apple juice 4 ice cubes Method To make this vegetable smoothie drink simply pour the apple juice into a blender, add the chopped spinach and process until blended. Next add the chopped carrots and mix well, then add the ice cubes and more juice if necessary. Mix until a 'smoothish' consistency. Pour the mixture into glasses and drink up! This is a great pick-me-up. =================================== Carrot All Day Smoothie Recipe (serves 2) Ingredients 3 fresh carrots (peeled & chopped) Cucumber (chopped approx 4 x 1 inch slices) 1 Golden Delicious apple (quartered & core removed) 2 handfuls cashew nuts 1/2 handful sunflower seeds 1 small cup fruit juice (grape/apple/pear/cherry etc) 1/2 teaspoon salt 3 tbsp's fat-free yoghurt Method Place all of the ingredients in the blender, and let it whiz!. Leave it running for a good while until smooth. If having for breakfast it will keep you going till well after lunch time. ====================================== Gingered Beet Smoothie Ingredients 1 beet, cooked and quartered 2 cups strawberries, frozen 1 cup unsweetened almond milk – or milk of choice 1-inch fresh ginger, chopped honey or stevia for sweetener Ice Directions Add all ingredients into your blender and blend until pureed. If you need more liquid, I usually add water. Pour into your glass and enjoy!Makes 1 big or 2 small glasses ======================================== Beet and Carrot Smoothie (aka Fruit and Vegetable Smoothie) Makes 2 servings (about 1 1/2 cups each) INGREDIENTS 1 small red beet (equivalent to 1/2 cup), peeled and coarsely chopped 1 medium-sized carrot, peeled and coarsely chopped (about 1/2 cup) 1 sweet apple, such as Honeycrisp or Pink Lady, coarsely chopped 1 ripe pear, such as red Bartlett or red D’Anjou, coarsely chopped 2 tablespoons fresh lemon juice 2 teaspoons minced fresh ginger 2 cups water INSTRUCTIONS Step One: Steam beets and carrots until tender, about 10 minutes. Let cool to room temperature. Step Two: Combine all ingredients in a blender, and blend until smooth.
