Ulog 49: Easy Peasy Chicken Pancake
I am not a fan of fried stuff because of the extra work in cleaning the kitchen after that, also it uses up alot of oil. But the children definitely love it, you know, those fried chicken and chicken nuggets.
So, whenever they wanted to eat fried chicken and chicken nuggets, I will bring them out to KFC or Texas Chicken.
However, I still prefer to dine at home most of the time.
My aunt did her way of chicken nuggets in her own way and she told me that it was super duper easy! She called it chicken pancake. What a special name. I asked her how to make it and here was what she said....literally in one sentence.
"You just marinade the minced chicken with some salt and pepper, and if you want add some chicken stock, and if you want add some onions and carrots with the minced chicken, up to you, and then add a dash of either potato flour or tapioca flour, mix them together, crack one egg and mix together again, and then you scoop one tablespoon per one tablespoon of the minced meat to pan fry them like how you pan fry pancake."
Sounds awesome to me because panfry means less oil! =)
Literally one LONG sentence.
I tried her recipe while recalling the long sentence, and everything was an estimation because she didn't tell me the exact measurement. We call this way of cooking 'agak-agak', haha, in our language.
