Stop Counting Calories, Start Counting Colours!

Healthier on the inside, more beautiful on the outside. Go vegan and expect better skin, more energy and a clean concious.

Make sure you do it right though! With so many delicious vegan alternatives hitting the market it's easy to live off of soy products and refined carbs. Visit any vegan fair and you'll be spoilt for choice when it comes to cakes, donuts and meat alternatives. These things are amazing, and bring so much joy to my vegan life! My advice though...

Make sure you count your colours! If you're not instinctively health aware you could find your food intake for the day being shades of beige. White bread, chips, cereal etc. Stock up your kitchen with colourful, nutrient packed food and make sure for meals you control you are packing in the colour and protein. That way when it comes to eating out you can enjoy whatever vegan dishes are available, knowing you have filled up on nutrition at home.

All of this has become especially important to me now that I am feeding another human with everything I eat. If you're pregnant and considering a more vegan centred diet, I recommend watching "What the Health", it filled me with confidence.

My meal tonight: Buckwheat, quinoa and chickpeas cooked with red onion, garlic, cherry tomatoes, shitake mushrooms, organic spinach and broccoli.

I seasoned it with half an organic stock cube, fresh basil from my balcony, tumeric, paprika, pepper, lemon, tabasco sauce and a splash of coconut "soy" sauce.

It took me less than 10 minutes to whip this up. The grains were from a pre cooked packed (the same isle as you'll find Mr Ben's rice packets), the broccoli and garlic were pre chopped and frozen. The only prep I had to do was to chop the onion, tomatoes and mushrooms. Everything else, I simply threw in the wok straight from the fridge or cupboard.

A note for cooking, make sure you research cooking oils. You can get so much goodness from the oils you cook with, but only if you use the right ones, otherwise you can be doing damage.

If you live in a big enough/ hipster enough city you might even be spoilt for choice when it comes to healthy, vegan food when you go out! Here are some of my favourite dishes we've had this year. All of them are organic, some are even completely raw. But all of them were mind blowingly delicious!!

Yum! What dish is the photo you posted of? It's the 3rd photo listed; has a knife cutting through it, topped with hummus (?) and olive.

Oh that was a good dish! Mushroom croquettes, with some sort of bean humous. It was in an organic vegan restaurant/bar in Girona, Spain. By the end of our holiday I think we'd tried everything on their menu!

That's a good advice. Always cook with colorful ingredients. It is tempting to buy all these new vegan alternative replacement products. I was vegetarian twenty years ago already when there were not so many options but fresh cooking. So I had to learn to make delicious healthy food by my own.

Thank you for your comment, sorry I didn't see it until now. I used to work at a summer camp in the US where all the children would camp back with beige filled plates. I made a game out of counting the colours on everyone on my table's plates. I found it was much more effective than taking to them about healthy eating, the only way they could win the colour count was by stocking up from the salad bar, they were trying veg they had never tried before. :)

I am a Vegetarian and you guess what, it's the best food in the world.

It most definitely is! I never feel like I'm missing out, I just feel bad for those around me who don't now how great it tastes and feels to eat cruelty free!
