Keto Menu Is My Friend


I used the same crust recipe for this snack and appetizer on New Year's Eve as I did when I made my keto-friendly pizza the other day, but instead of making another pizza, I tried to make a mock Buffalo Wild Wings artichoke & spinach bread.

I added the leftover cheese sauce from the roasted cauliflower dinner from the previous evening and it turned out so delicious!

We are only one week (today is the seventh day in) on this food choice lifestyle and I have to say I am doing better than I had expected. I have always considered myself a carb-aholic and would rather have potatoes, no matter how prepared, over the main meat in a meal, but this keto change has me opening my eyes.

It's not so much the carbs I want, it's the different food textures I am craving. Things like biting into a sandwich then having the crunch of a potato chip along with it. Well, I have been eating my sandwiches in a leaf of Boston or bib lettuce (see image below) and I have been quite satisfied.

My lettuce sandwiches for the day include a slice of bacon, some Buffalo flavored chicken breast and a half a slice of Muenster cheese. PERFECT and very filling!

Another snack I made for New Year's Eve was some bacon and cheese stuffed mushrooms. THEY were heavenly!

After one week (as I am vowing to only weight myself once a week and not get caught up in the numbers' game) I am down five-pounds, I don't feel that after eating carbs coma and bloated feeling and I noticed I have more energy. So it's a win-win-win for me so far.

We love Keto! My husband and I have been living this lifestyle for a year now and not only have we both lost weight, but we feel much better too. It is definitely a life-style change but it wasn't as hard to go carb-free as I thought it would be...although I did indulge in my grandma's homemade molasses cookie this Christmas.

Oh definitely re: feeling better! While it's only been a week, we are already feeling the positive changes.
I like to scour the web now looking for new recipes and ideas... a whole new world has opened up for me and my culinary skills now.

I've had really good success with Keto for most of the past year. I've gotten so that I really like the food choices (I have always been a carnivore).

I have weighed when I get up on Saturday morning for the last several years. I am now 3lbs from my ultimate goal which will make me as light as I have been since college days. Pretty cool.

I will follow low carb but not strictly Keto when I get there.

A couple of things: I use CarbManager ap on my phone. It makes it easy to track my intake and set personal carb and fat and protein limits. Once I have a food entered it is just a click to record it. I can enter my 'personal' recopies easily.

I also use 'OLE' brand 'Extreme Wellness' wraps. 5 grams net carbs per each, I can eat TACOS and rolled sandwiches.

I generally speaking make one pizza per week, using the 'Fathead' recipe from You Tube. I can have 1/4 of it for a meal and it microwaves just fine for the next three days...

YES! We used the FatHead recipe for the pizza (and the snack too)- It was really good. Reminded me of a thin-crust pizza dough and really filled the craving we were having. I am already realizing that it's not the carbs; as I am not missing them... yet.

I'll have to check into the CarbManager app.

It's been pretty amazing, and almost terrifying... when we see a commercial for a fast food or restaurant and I'll google the carbs in that meal or burger and see it's almost the entire days' worth of carbs. We both have a personal number between 50-75 carbs per day right now and we're doing pretty good with it. Hubby was going to have a bagel the other day at work and splurge but then he asked a co-worker how many carbs in the plain bagel... 50!!! He passed on the bagel and waited until he got home for whatever keto pleasure I was cooking up- which happened to be the pizza. He said it wasn't worth his entire days' allotment of carbs for one bagel.

Howdy there goldendawne! how wonderful you are doing on Keto! Most people get the Keto flu the first week. I didn't but my wife and everyone she talked to did, really messed them up for a week at least!
