Simple Monday and Tuesday Suppers
Mondays have for a while been pasta nights, but for a number of reasons that's changing. Still meat-free, though, significantly bolstered by the brinjal bounty from the garden and gorgeous giant garlic that we were given.
Tuesdays are for leftovers. After Sunday, there was chicken, roasted butternut and steamed beans. And it was cold, so the meal needed to be a warming one. What better than a pilaf?
