I am happy to be here again sharing sales and business experiences.This time I want to leave you some recommendations that will help you a lot when baking. I hope they are very helpful to you. Let's get started ...

Baking the cake for capable is my first recommendation. Why ?

When the cake is baked in small batches or in layers, it lasts less time in the oven, this keeps the cake moist and super fluffy. On the other hand, when we bake mixtures in large quantities, it lasts longer in the oven and therefore dries and runs the risk of being caked.

❷ The most advisable thing is to bake at 130c, it is a high pastry technique, more however, I think that every pastry chef knows his oven and knows at what temperature he can bake. 🤭

❸ You should never bake the cake, the same day that it is going to be decorated or used for the celebration, it is best to do it at least two days before the party. A cake always needs to rest to be firmer when decorating, filling etc.

➍ Always always when you take your cake out of the oven you should let it rest, then wrap it in envoplast and store it in a plastic bag, so that it can be kept in the fridge for several days without the need for it to get hard and dry.

Putting the filling to a cake is also an important part of the preparation of it, there are fillings such as ganache, which can be prepared and frozen and filled like those with fruits that cannot be frozen. Rather, it must be prepared at the same time it is going to be used.

Containment line in the cakes.

As you can see in this photo, I do it but I use a containment line around the filling of the cake. In this case, the containment line is chocolate buttercream, and the filling is chocolate-arequipe.

What is the containment line for?

The containment tape is a circle of any cream with good consistency that is formed around the filling, this in order to prevent the filling from spilling when placing the other layers of cakes.
This line does not have to be too big and not too thin.

The same cream from the containment tape can also be used to cover the cake.
