Preparing my Special meal
Hi chefs, I'm delighted to share this beautiful delicacy with you. My mother brought some yams for me and I thought of what to do with them so, I remembered this meal, I decided I was going to prepare it. Don't just be in a hurry, you'll love it.
Today, I want to show you how to prepare this top dish in my culture. This delicacy is very peculiar and well enjoyed by the Ibibio and Efik ethnic groups in Nigeria. It is called "Ekpang nkukwo." This food is so important that the people cook it during their ceremonies especially during traditional events.
The following are my ingredients.
- Water yam
- Cocoyam
- Cocoyam leaves
- Scent leaves
- Crayfish
- Periwinkle
- Smoked Fish
- Dried mushrooms
- Palm oil
- Salt and seasoning cubes
You'll imagine if it's going to be cooked or mashed. No, just follow as I reveal it one after another.
First step: you have to peel the yam and cocoyam. Cut it into pieces if the yams are big, to enable you be able to crate it.
Second step: wash the yam and cocoyam and afterwards, proceed to crating them. Just as you've seen here. If you have a good blender, you can blend yours till it's smooth.
Third step: after crating the yam and cocoyam, mix the paste with a small amount of water and salt till well mixed up.
Fourth step: wrap the mixture with washed fresh cocoyam leaves, not the strong leaf. The leaf will be cut into pieces before it's wrapped, then drop the mixture in the pot. This process takes a bit of time as the wrapping of the mixture with cocoyam leaves is usually very tiny wraps into the pot.
Fifth step: add hot boiled water into the pot, before placing it on the fire. You allow it to boil before you can turn it or thirst the food to know if the seasoning and salt is ok to your taste.
Sixth step: Add palm oil and your seasoning cubes, proteins, for example, smoked fish, crayfish, meat and even periwinkles. I added dried mushrooms to mine too. All well seasoned.
Seventh step: leave the food to boil for 3 minutes before you add the sliced scent leaves and then you turn off the fire.
Eighth step: serve your food and eat it as much as you want it.
