Local delicacies: Vegetable soup 🍲 (Edikang ikong)
Let me ask, are you familiar with different edible leaf found around the globe?.
My country is blessed with lots of leafy greens vegetable soup. Leafy vegetable soup are staple cuisine greatly consumed by African.
We have Afang leaf known as wild spinach and the soup is called Afang soup, we have bitter leaf and the soup is bitter leaf soup, then the one I am sharing with you today is Fluted pumpkin leaves know as Ugu and the soup is called (Edikang ikong soup).
Pumpkin leaves is planted here in my region and l have a large farm. I will sit at comfort of my home, buyer will seek permission from us and pluck it and buy.
Today was another raining which prevents them from plucking much. When I set my eyes on the greeny and fresh vegetables, I was craving for Edikang ikong. I use the available ingredients at home and prepare it.
Below was the available ingredients
- Palm oil 🪔
- Pumpkin leaves 🍀
- Water leaf 🌿
- Meat 🍖
- Periwinkle (with shell )🐚
- Periwinkle without sheell
- Seasoning cubes
- Crayfish
- Cowskin 🐄
- Salt to taste
- Pepper 🌶️
- Onions 🧅
Today,I am ready to share with you how I prepare my Edikang ikong soup.
In a clean pot, I transfer my meat,cowskin into it, I added salt, pepper, onion and cubes and steam.
After some minutes,I add prewinkle, this one comes with shell, l have wash it thoroughly with salt.
I continue to cook by adding water leaf, since it have a lot of water on it. It drip the soup with water.
Then finally added my leaf, add palm oil crayfish, then cover your pots to simmer my for 2 minutes.
The taste and aroma of this food was out of this world, it was delicious. I eat it to my satisfaction

Incorporating leafy green into our diet have numerous health benefits.
All leaf contains antioxidant which helps to protect our cell damage. Leaf are good source potassium, calcium and iron. Certain eatable leaf helps in lowering blood pressure and balance cholesterol levels. Those once that contains vitamin K help in supporting our bone health. Others contains Vitamin A and C.
The above health benefits is only for the leave. The meat, cowskin and periwinkle are the proteinous part of this soup which makes the meal healthier for all age. Beef meet contains omega-3 ty acids, which are known to improve heart health and reduce bad cholesterol. It is also rich in protein, which helps to build strong muscles, repair tissues, and keep you feeling energized after eating. The calcium and phosphorus found in this meal play a role in keeping the bones strong and overall health sound.
