Review of Aceh Roast Duck atau Bebek Panggang
Acehnese cuisine is famous for its wealth of spices. Almost all typical Acehnese cuisine uses spices, including cuisine that uses grilling or burning. One example is Acehnese roast duck.
The duck used is an ordinary duck, or in Aceh, it is called an item. These ducks usually produce eggs, which, of course, are used to make salted eggs or other things. But these culinary techniques use duck meat for grilling.
Before the roasting process, spices are prepared to cook this duck. Of course, it consists of spices characteristic of Aceh. Among them are turmeric, coriander, salt, coconut milk, cloves, and others.
These ingredients must be mashed first. Then, they are mixed with duck meat in a pan or pan. Add coconut milk, salt, chilli, and turmeric. Cook on the stovetop. Cook until the coconut milk runs out and is mixed with spices.
First, allow the cooked duck to cool. Then, prepare the grill tool. In this case, we use a grill pan directly on the stove.
Manual grilling with coals is also possible. Of course, you must have a wire grill. Embers must also be prepared, generally embers from a coconut shell burning. You have to wrap the duck meat in banana leaves so it doesn't burn quickly and the heat is evenly distributed.
The roasting process is carried out so that duck meat is easy to tear by hand. If the duck meat is easy to tear by hand, then the roast duck is ready to be served. Before serving, prepare soy sauce, onions, and chilli peppers.
