Sri Lankan Style 'Cutlet' Recipe

Hope you guys doing great! It's @damithudaya from Sri Lanka again with another tasty dish.
I’m pretty sure you all may have tasted various types of cutlets. But have you ever tasted the mouth-watering taste of Sri Lankan style of cutlets? If you haven’t, I suggest you must give a try at least once in your lifetime. It is that much delicious.
A dish of nicely fried cutlets is a very frequent view at most of the special occasions in Sri Lanka like wedding ceremonies, alms giving events, parties and many more such important events. It is a dish that everyone, from the smallest kid to old ones, loves to eat. My mom usually makes this dish for lunch and dinner and also sometimes for evening tea time as a snack.
Cutlets can be made using fresh fish, canned fish, chicken, mutton and also using beef. But in Sri Lanka, most commonly used method is making cutlets by using canned fish. It is pretty easy to use canned fish than using fish.
Yesterday my elder sister and I gave a try making cutlets for evening snack. It didn’t take much time since I helped her. But I think it may take a little longer time if you are going to make this dish all alone.
So, let's see the recipe.
Ingrediants
- Potatoes – 500 g
- Egg - 1
- Canned fish – 150g
- Onion – 200 g
- Green chili – 100 g
- Ginger – 10 g
- Garlic – 20 g
- Plain Flour – 30 g
- Curry leaves, Pandan leaves
- Bread crumbs – 100g
- Cooking oil – as needed
- Salt, pepper powder, turmeric powder according to the taste
( 25 cutlets were made using these amounts)
Preparation
* Step 01: Peel off the potatoes, wash and cut each potato into small parts. Then boil them. Remember to add some salt as well while boiling.
This is not the usual method of boiling potatoes. Usually, potatoes are boiled at first and then peel off the skin. But we interchanged the process. We peel offed the potatoes first and boiled the chopped potato pieces so that it took very short time to be boiled nicely than boiling the whole potatoes.
* Step 02 : While potatoes are boiling, take the canned fish and remove all fish bones. Then break into somewhat small pieces.
* Step 03 : Peel off onion, garlic, ginger and wash all of them well with green chili, curry leaves and pandan leaves. Then chop them as shown in the figure.
* Step 04 : Let the boiled potatoes cool down. Crush them with fingers until only very small pieces to be remained.
If there were big pieces of potatoes are remained in the mixture, cutlets may be cracked when they are being deep fried. So make sure you crush them well now.
* Step 05 : Add sufficient amount of oil into a pan to make the mixture. Then heat it. When the oil is getting hot,
add the chopped garlic, ginger, curry leaves and pandan leaves at first and mix them well. A nice smell of fried garlic, ginger and other leaves can feel at this moment.
Then add prepared canned fish and mix them well. Next, chopped onion, green chili and salt, turmeric powder and pepper powder are added according to the taste. Mix well. Potatoes are added finally since they are pre boiled. Mix all of them well.
The mixture can be taken out when it is looked like this.
* Step 06 : Now make the cutlets in rounded shapes. You can use your both hands to make rounded ones.
* Step 07 : Now it’s time for coating cutlets.
First the coating mixture should be prepared. Take the Plain Flour and put them into a bowl. Take the egg, beat it well and add to the bowl. Then add a little bit of turmeric powder and salt as your taste. Mix them all while adding sufficient amount of water.
Soak the cutlets one by one in the coating mixture. Then coat the cutlets with bread crumbs. Make sure you soak the whole cutlet and coating with bread crumbs all around the cutlet otherwise cutlets may be cracked while they are being fried.
* Step 08 : Add some cooking oil into a deep fry pan and fry the cutlets until they turns into a golden color.
I couldn’t take a better photograph of deep frying the cutlets when my sister started frying, since I was busy with coating them. So I took one after coating cutlets but at that moment a little bit of oil was remaining in the pan and this was the last cutlet which was fried. But remeber to deep fry.

Yeah... Not very hard to make. And you can use it in any function or tea time also. It's 'cutlet' in sri lanka.
