Dear Diary: My High Calorie Breakfast Of Lye Rice Cakes

Rice Cakes with Lye

Today after I had eaten my stir-fried noodles with rice a vendor went by again and I bought these rice cakes made from ground rice and a food grade Lye. It is a bit soft then chewy because the hard chewy ones contain more Lye and sometimes they taste bitter, not really good to eat and probably made from not measuring the ingredients before making this kind of rice cakes.

I just want to eat these ones because they are just easy to eat and are softer than usual which means that they probably contain less Lye. The Lye makes it get that chewy texture and the Lye is a the type that is edible unlike the Lye cleaning solution, that is not the type used in this kind of food.

There are also noodles that has a Lye as one of its ingredients and again the purpose is to make that tough and chewy or springy in texture plus the flavor is like a very subtle bitter that give it a distinct flavor.

So I just had my food today and I might not be able to eat until later in the day. I just eat whenever I am hungry because of my appetite-loss issue but I am still thankful that I am able to eat despite all these burdens in my health-troubled body. May God help me.

I do not like dairy products anymore because it just gives me a gut upset issue because of my lactose intolerance but I was to solve it will mean another expense because I have to but some Lactase just for me to enjoy dairy products without me getting bloated and get a diarrhea which i do not want to happen and it is the reason I could not tolerate my protein shake powder because it has lactose.
