RECIPE: Red Velvet Cake With Creamcheese Frosting

I cannot imagine a single occasion to celebrate without a delicious cake. Be it a birthday, an anniversary, Valentine's Day, Mother's Day, Father's Day, Christmas or a regular party, there is one thing usually common - A Cake!

Cakes appear in different shapes, sizes and flavours but no matter what, cake is capable of spreading happiness in its surroundings.

Today, I am going to share one of my family's favourite cakes recipe, which is the The Red Velvet Cake. I have tried a LOT of red velvet recipes, and this is by far the best! It is soft, moist, velvety sponge with fluffy creamcheese frosting..


Ingredients:

• 345g cake flour
• 1 tsp baking soda
• 10g natural unsweetened cocoa powder
• 1/2 tsp salt
• 115g unsalted butter (room temperature)
• 220g castor sugar
• 4 large eggs (separate yolk & whites)
• 1 1/2 tbs vanilla extract
• 1 tsp distilled white vinegar
• 240ml buttermilk (1 cup milk + 1 tsp lemon juice/vinegar)
• 240ml canola oil
• Red food colouring

Cream Cheese Frosting
• 450g cream cheese
• 115g unsalted butter
• 150g-200g Icing sugar (adjust to your liking)
• 2-3 tbs cream/ milk
• 2 tbs vanilla extract


Directions:

• Preheat oven to 180°c

• Whisk flour, baking soda, cocoa powder & salt

• Beat butter on high speed, add sugar and beat until creamy

• Add in the oil and mix well (butter may look piece-y, but its ok)

• Add egg yolks & vanila untill well blended

• Beat in vinegar and about 3 tbs red food coouring

• Add dry ingredients in 3 additions alternating with buttermilk (beginning and ending with dry ingredients)

• In a different bowl, beat egg whites until thick & foamy. Fold into the cake batter

• Pour cake batter into pans and bake for 30-32 minutes

CreamCheese Frosting

• Beat creamcheese and butter together

• Add icing sugar and 2 tbs of cream / milk

• Add vanilla and 1 more tbs of cream / milk

Note: I add a tbs of lemon juice to my creamcheese frosting
