Scallops and curry - it just works 👨‍🍳

So a few weeks back I did a post on cooking with alcohol where I made the sauce for this fresh, palet cleansing dish.

This is my pan seared scallops with avocado salsa, mild yellow curry sauce and dill sour cream.
It's to take this dish of my menus as my diners complain loudly if I do 😂
Leaves me no choice but to always have it on my menu.
Scallops are so delicate and need to be cooked perfectly to be enjoyed. Hot pan is the key but do not allow the fire to engulf your pan as you will give your scallops a unwanted smokey flavour and black tinge.
This you don't want. They should be nicely seared on both sides for 1 minute. No longer. They should have a nice glassey look when you cut into themZ
You might think that this sauce will be to strong for the scallops but it's actually so complementing, with lightly dressed avocado and tangy sour cream it's heaven in your mouth.
