Ingredients (for about 300g)

  • 200g of hazelnuts
  • 125g of sugar
  • 20g of water

Preparation

  • Roast hazelnuts in the oven at 170 ° C for 10 minutes.
  • In a saucepan, bring the water and sugar to a boil.
  • When the temperature reaches 121 ° C (thick syrup), add the hazelnuts and mix (the sugar will recrystallize).
  • Continue stirring over low heat until all the sugar is caramelized.
  • Pour on a baking sheet lined with parchment paper and allow to cool.
  • Put the cold caramelized hazelnuts in the mixer bowl and grind: you get first a powder and then a paste.
  • Put the dough in a clean container like jam jar and keep in a cool place.

Note: instead of hazelnuts, you can use almonds or a mixture 50/50 almonds / hazelnutsPraliné-maison.jpg
