Happy Sunday my sweet friends! Today has been a lazy day around the Bird nest. It’s been a cloudy day, one where it feels best to be curled up on the couch with a good book and your favorite glass of iced tea! I had forgotten what overcast days felt like; we rarely have a full day without sunshine! Have you enjoyed a restful day today?


It brought back fond memories of Sundays when our girls were young...


I always prepared a special breakfast….


Blueberry Muffins, Chocolate Chip pancakes and Egg sandwiches to name just a few. Much like the breakfast I made when my daughter @mouontainjewel was here a few weeks ago! She brought beautiful shiitake mushrooms from her homestead, and mentioned pinwheels for breakfast! Who could say no?


While the bacon was cooking…


She chopped the onions and shiitakes while I made the dough, a grain free “keto” friendly dough. It felt so nice having her cooking with me. She’s a wonderful cook and was eager to do this together.

Bird’s Grain Free Dough

  • Almond Flour (3/4 cup)
  • Mozzarella Cheese (1 ½ cup)
  • Cream Cheese (2 tbsp.)
  • Fresh Egg (qty 1)
  • Nutritional Yeast (1/4 cup)

No regrets…


when I make these pinwheels. So often “pizza doughs” make you feel so bloated but not so with this recipe. After microwaving the Almond flour, cream cheese and Mozzarella for about 1 ½ minutes. I added the egg and nutritional yeast and stirred well. Feel free to add your favorite spices! Sometimes I enjoy garlic powder or Italian seasoning, Today I chose to add a dash of garlic powder and oregano before sandwiching the dough between a couple of sheets of parchment and rolling the dough into a rectangle.


Sunday Morning Toppings…


the skies the limit but believe me, less is best! So often I make the mistake of adding far too many toppings! Lol As a result, they don’t roll very well so take heed!! Spread on the pesto, layer the mozzarella, bacon, onion, black olives and shiitakes, shiitakes, shiitakes! Top with a sprinkle of cayenne pepper and a liberal shake of nutritional yeast. Now step back and admire! Wow!

Gently…


rolle the pinwheel up, cover with parchment and place it in the freezer for about 20 minutes. It’s so much easier to cut if you give it a few minutes in the freezer.

Sliced and ready…


to bake, into the oven they went for 12-15 minutes at 400 degrees. Perfectly golden and bubbly, the family was ready for breakfast!

As we enjoyed our juice this morning, I found myself smiling. What a wonderful time we had while the girls were here, great memories in the Bird kitchen! We may not always have sunny days, but to have warm memories of time spent with family we are indeed blessed and content. Thanks for stopping by, I hope you have a peaceful week ahead.

hehe, thanks @tattoodjay :) She was quite happy with the breakfast....certainly a good reason to visit mom and dad, lol!

I will have to come up with treats to make sure the grandkids want to visit us often when were closer tot hem :)

We will go ahead and take a tray of those pesto pinwheels over here please. I mean does anything that comes out of you kitchen flop? I think not! Maybe I’ll have to veganize these one day. Shhhh… don’t tell anyone but we’ve been indulging in some of Greece’s excellent feta cheese lately. Sooooo gooood!

Okay so I'll try making these with my vegan cheeses and let you know! I need to perfect this before my dairy/gluten free daughter visits, lol So feta huh??? Nothing better on a salad...mmmmmmm Enjoy it girlfriend! xx

We have been but maybe a little too much. It’s amazing how your body reacts to things after not having them for awhile. I’ll keep my eyes peeled for the dietary restricted version then 😉
