Ang Papaitan ay isang sikat na pagkaing na may sabaw ng Ilokano na karamihan ay binubuo ng laman loub ng baka o kambing. Ang pangalan ng ulam na ito ay nagmula sa salitang Pilipino na "Pait", na nangangahulugang "mapait". Ang mapait na lasa ng sopas na ito ay nagmumula sa apdo. Ito ay isang mapait na juice na kinuha galing sa atay. Masarap itong gawing pulotan pag may pyista. Yun lamang po at Salamat.
