MY FAT THURSDAY: Quick Vegan Chocolate Chip Cookies From Chickpeas!🍪🍩 [FOOD PHOTOGRAPHY]

Hello every body!I Hope you're doing well! Today I woke up, and I saw a lot of white fluff outside the window. I love these cold days like this one, when it's snowing. Perfect aura to curl up to your blanket, with big cup of green tea. 😆 Anyway, today in Poland we celebrate "Fat Thursday". You may ask: What kind of a strange celebration it is?
Okay, so let me explain! 😉
"Fat Thursday" related to Catholic calendar. This feast depend on the date of Easter, so it's also moveable feast. This day in Poland begins the last weekend of carnival. This is the last thursday before Ash Wednesday, which starts 40 days of fast before Easter. During this fast, Christians (for religious reasons and also penitential reasons) , as a preparing to Easter should hold back with eating some dishes, sweets etc. According to traditions in this day people may gorge ourselves on, LOL!


So today, almost everyone in Poland eats donuts, home made doughnuts, funnel cakes, carnival roses and more. And everything is deep-fried! My gooood.. Moreover! There's even one superstition, that if you won't eat at least one doughnuts - you will have out of luck for the rest of your life. Ahhhh. I love so much these superstitious, lol! 😆 And do you belive, that people at the end of the day, boast how many doughnuts they ate!? Even if I ate them in the past, I was able to eat three- four, while others even 15!!!! You know how many calories have one crullers? Around 417/100g and it's full of fats. Damn, I think is too much for me😆


Anyway, I decided to make something also for myself today, little snack which I can take with me later to work. Because I need to avoid very fat or deep fried food (it doesn't sound good to my stomach) with every amount of sugar and other stuff, like donuts or whatever. Because I had one can of chickpeas in my shelf, I made healthy version of Chocolate Chip Cookies. 😋 Yeah, it sounds so much better than deep-fried treats. You know what is the best in these cookies? They're made from Chickpeas, they're Vegan, Gluten-free, and also Sugar-free! Moreover, they are high in protein and minerals. As a sweetener I added a bit of xylitol, but this is completely optional. I didn't even have to add flour! You can use your favourite additions like seeds, raisins, nuts and chocolate. I made them with 70% chocolate for vegans. So guys, let me show you recipe for these yummies for my Fat Thursday!🤗 🤩



For preparing you will need:

  • one can of chickpeas
  • three tbsp of peanut butter (I used 100%, no salt and sugar added)
  • 3/4 tsp of baking powder
  • sprinkle of salt to taste
  • two tsbo of xylitol (optional)
  • I also addedd a bit of vanilla extract (few drops)
  • 50g of chopped good quality, dark chocolate

Preparing

  • wash on strainer chickpeas (FYI: don't pour water from chickpeas! This is valuable Aquafaba, from which you can make delicious mousse, so leave it for later! ;)) and then, by kitchen towel dry it
  • put chickpeas into blender, add the rest of ingredients (except for chocolate) and blend, till the mass will be soft
  • into dough add chopped chocolate and mix it preciselly
  • start to form little balls, place them on baking tray with baking paper
  • by hands or by fork flatten them
  • bake in oven at 180°C around 20 minutes (or till they'll be gold)
  • serve them dried (they'll be more crunchy🤤)



    I made a lot of photos, and I couldn't decide, which I should post, so I added most of them😂 How you see, these cookies are only from few ingredients, which makes them the quickest way for Chocolate Chip Cookies, and you don't need some "special skills in cooking". Even kids are able to do them 😎. I hope that you enjoyed the quick history about "Fat Thursday" and te recipe of course! Awe, I love using beans in deserts! Somehow they end up tasting so much better than the original! My next post is going to be on the black bean brownies I made today. I swear they're a million times better than traditional brownies.
