Mediterranean breakfast pita
We tend to run out of breakfast ideas. Everyday we crave for a nice and filling yet healthy breakfast. Eggs are an excellent breakfast, but we get tired of preparing it the same way every morning. I will be sharing how to make a Mediterranean breakfast pita. It is simple, healthy and absolutely delicious!
Ingredients:
- Store bought whole grain pita bread with pocket
- Tomatoes
- Eggs
- Cucumbers
- Hummus
- Black pepper
- Parsley
- Salt
- Hot sauce/ mayonnaise/ ketchup (optional)
Dice the tomatoes in a fair enough large size. Chop the cucumber into thin slices. Boil the eggs and cut them into slices. Chop the parsley finely. Add in about 1/2 cup hummus. Crush black pepper and salt. Hot sauce, ketchup or mayonnaise is an optional twist. I like to add a bit of mayonnaise to mine. Fill all ingredients into the pita and enjoy.
