I'm surprised that they are slightly sweet when still green. I've had mangoes here that were yellow and really sour. I wonder what dictates their sweetness. Are they native to Thailand?

Wow - a fear of fermenting? Maybe you could write a post of that and get inputs from the many serious fermenters out here on the steem blockchain. This is the EASIEST way to ferment. Goof proof and 150000% safe - just keep everything fully submerged. This is also an incredible way to make easy raw probiotic sauerkraut.

😱OMFGs my grandmother used to make the most amazing chutney using green mangoes.

She says you need to use the green ones for the sourness.

Never thought about it until just then, but it makes sense that the chutney is used to aid digestion, eaten with certain curries.

You two are too funny. There are a couple of Indian cooking sites that I'm sure will have a basic green mango chutney recipe. No need to compost me just yet. ;) Yes, green mango chutney was on my radar already for next weekend. We love it too!! And since @eco-alex has given us some Indian kitchen basics, we now cook Indian better than the local restaurants. LOL... The difference between the chutney and the fermented mangoes (apart from taste and texture) is obviously that the chutney has the digestive enzymes but the probiotic part killed by heat. ALL GOOD. After all, we have a glut of green mangoes. Stay tuned for my chutney post and recipe. :)

Adding to the shopping list for when I go to the Footscray Market. Definitely not green mango season here so I expect they will be imported period however you have made me desire green mango like nobody's business. Have never thought of fermenting it but then I have never had an abundance of them either!!!!

New @naturalmedicine pin up poster girl? LOL. I'm healthier and happier at 55 than I was at 25. One serious health glitch that is being dealt with, but it would seem I am winning on that front. And yup, this is how I look on an average day in Thailand. :)

It's great what good food will do for how you feel. I just turned 30 a couple months ago and feel better than any day during my 20's. Down 30 pounds so far eating natural food and local meats. Hoping it will only get better the better my good gets :)

haha.... we have a word in Thai ... "paak waan" - literally means "sweet mouth". :) Eating great helps a lot, as does laughing, life balance, loving with great abandon and deselecting from the system. Will be 56 in November. :)

Food banks, no. Temples and orphanages are all groaning under their own huge weight of green mangoes... the trees grow like weeds here. We give some away (eg to my worker this morning) but most people in the village have more than they need. It's hard to sell them cos they are SOOOOO cheap. There's a reason green mango salad and green papaya salad are virtually national dishes. :)

You can add more thing with the unripe mango. It is a great heat wave resistant. in India, we use to prepare a salthy/sweet drink from unripe mangos which is very helpful and energetic during strong heat waves. Bake it, peel it, mess it add water salt and sugar, little bit of cardimom powder and that's it.... Our summer drink is ready. I missed to share the post...but now I think I could make one 😉

I love every recipe of green mangoes , like green mango juice, mango pickles , mango chatni... So on.. Well , ripe mangoes are delicious but green mangoes ... Hmmm ... another level yummy...
