Kidney Bean Apple Salad (simple, healthy and vegan)

Today, I want to share another quick, easy, delicious and healthy recipe that's perfect for lunchtime at work. It's a variation of my previous shared Lentil Apple Salad. I used kidney beans instead of lentils. They also go really well together with apples. Kidney Bean Apple Salad
Ingredients
(for 2 main servings and 4 side servings)
- 500 g kidney beans, canned
- 1 big apple (granny smith works the best)
- 1 onion
- 2 gloves of garlic
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tbsp liquid sweetener (I used fiber syrup)
- 2 tbsp parsely, fresh
- salt & pepper
Directions
- Rinse and drain the canned kidney beans.
- Chop the apple and the onion. Mince the garlic.
- Combine everything in a bowl.
- Season with salt and pepper. Mix together. Enjoy!
