Tonight's Valentines Dinner

Hello Steemians,

Despite my efforts in creating a video for the DLive Valentine's Day contest, my wife and I are not big celebrators of Valentine's Day.

We did however have a wonderful dinner that my wife prepared. We had Griot with Fried Plantains!

Griot is a traditionally Haitian cuisine, it's fried pork. Specifically we had fried pork shoulder. To make it extra juicy on the inside my wife first pressured cooked the seasoned pork before frying it. It had a crispy and crunchy outside with a juicy inside.

The sliced green (unripe) plantains were soaked in salt water overnight. Then they were flash fried, pressed, and then re-fried.

They were topped with pikliz which is a Haitian condiment that's like a hot slaw. Ours was made with vinegar, cabbage, carrots, onions, and habanero (or scotch bonnets). It's seasoned with lemon pepper, garlic, black pepper, and salt.

We also boiled down the stock from the pressure cooker to create a thin gravy. Pictured is the gravy still boiling down, because I was hungry and ate it before it was finished. :)
