There's a plant growing on my balcony that's really gorgeous. It produces many, many almost circular leaves and literally everything is edible. In other words leaves, stems and flowers (which will grow in the coming weeks) can be eaten raw, e.g. as part of a salad.
The leaves (and later also the flowers) can also be made into an excellent pesto!
This is how you do it: Wash the leaves, crush them a little bit with a knife, put them into the mixer, add good oil (I use linseed and hemp oil), garlic, a handful of walnuts and the juice of a lemon.
Mix everything with a blender or a hand blender. Stir in freshly grated Parmesan cheese. Finally season with salt and pepper.
This is a delicious and healthy pesto sauce for spaghetti or any other pasta!

Auf meinem Balkon wächst eine Pflanze, die es in sich hat. Sie produziert viele, viele fast kreisrunde Blätter und buchstäblich alles an ihr ist essbar. Also Blätter, Stengel und Blüten (die in den kommenden Wochen noch kommen werden) können roh gegessen werden, z.B. als Teil eines Salates.
Die Blätter (und später auch die Blüten) lassen sich auch zu einer vorzüglichen Pesto verarbeiten!
Und so geht es: Blätter waschen, ein wenig mit dem Messer zerkleinern, rein in den Mixer, gutes Öl dazugeben (ich nehme Lein- und Hanföl), dazu Knoblauch, eine Handvoll Walnüsse und den Saft einer Zitrone.
Alles mit dem Mixstab oder dem Mixer pürieren. Frisch geriebenen Parmesankäse unterrühren. Am Schluss noch mit Salz und Pfeffer abschmecken.
Zu Spaghettis oder anderer Pasta ist das eine köstliche und gesunde Pesto-Sauce!

Okay da war ich wohl etwas spät dran. Aber mit Kapuzinerkresse bin ich auch dabei. Einfaches Spiel für mich, denn die hat meine Frau auch bei uns auf dem Balkon in einem Blumenkasten 😁

Deine Antwort ist vollkommen richtig! Es sind die Blätter der Kapuzinerkresse! Ich liebe den Geschmack und die bunten außerordentlich schönen Blüten. Sobald die ersten Knospen kommen, werde ich sie posten (es sind schon ein paar da!).

Ich weiß, für manche ist der scharfe Geschmack der Blüten und Blätter gewöhnungsbedürftig oder man mag es einfach nicht.

Auch Läuse sind Feinschmecker! Ich liebe das Senfölige und damit das scharf-würzige Aroma dieser Pflanze. Die (das?) Pesto gestern war echt lecker!
