Vegan christmas menu that you can enjoy at any time

Welcome to the first vegan recipe on this blog. I chose one of my favorite meals, which can be very often used as a christmas menu in Czech republic. It is a typical potato salad with soy meat in corn crumb.

What we need for the salad:

  • Potatoes
  • Peas
  • Carrot
  • Vegan mayonnaise (homemade or store bought)
  • Agave syrup
  • Lemon
  • Salt, pepper and any spices you like
  • Optional: apple cider, mustard

What we need for soy meat in corn crumb:

  • Soy meat (bigger pieces)
  • Flour
  • Spices (for grilling, salt, pepper, other…)
  • Corn crumb
  • Sunflower oil

And now let’s get to the recipe.

For the potato salad we have to first cook the finely diced potatoes without the skin in water without salt (we will use salt after the recipe is finished, so there is no need for that now). In second pot we will cook the finely diced carrots with peas (if frozen). After it is all cooked we let it cool down. Now we can prepare our homemade mayo or use the store bought one to mix it up with the potatoes and veggies. We use the spices that we like, preferebly salt, pepper with apple cider and mustard, after that we use a little bit of agave syrup to make it little bit sweeter. We use the lemon juice in the end and mix everything together.

The soy meat in corn crumb is really fast and easy to prepare and most importantly it is really delicious even if you prepare it few days before frying. First we have to cook the soy meat in salted water for 10 minutes. After that we have to drain the water from the soy meat (I use kitchen paper towels). Then we can roll the soy meat in flour with water and optional spices and then in corn crumb. We need to press it really well for the corn crumb to stick to the soy meat. When we are finished we slowly fry the soy meat in about 1cm of sunflower oil. After frying I like to use the paper towels again to remove any additional oil and make it a little bit healthier. Now that the meal is ready, it is time to serve. Enjoy!
