THE TRUFFLE EXPERIENCE IN ITALY

Well no,
We were in Lucca, Italy and saw this shop. One of many we learned later. And also you might know the truffles he is selling in a beautiful shop with a variety of truffle products. We buy some when we come visit my parents in Italy to make our own pasta with at home. So we also did that now. I think its an franchise organisation because we saw the shops in la Spezia, Rome, Civitavecchia and Genua aswell.
What is a truffle? It is a fungus, but a very special one. It is a hypogenous which means it lives and grows undergroud. An anchor to myth says that thunder causes the truffles to grow.Truffles like soil where also the oak grows, because truffles live symbiotically with trees drawing nutrition from them and giving back warer and mineralsalts. There are may types of truffles.
These are the variety thats available and you might know.
WHITE TRUFFLE OR TRIFOLA Picking from 1st October till 31st December, the dates depend on regional regulaties, weather an change every year.Where found : Umbria, Piedmont, Tuscany and le Marche
**BLACK WINTER TRUFFLE **Picking from 15th November till 15 March, also according regional calanders. Where found : This one is mostly found in the central Appenines, Piedmont and Veneto.
BIANCHETTO TRUFFLE Caked from about 15th of January till 30th of April. This one is very smelly and has a bit of garlic smell when you use it in food.
**SUMMER TRUFFLE **Picking from the 1st of May till 31 August, this flavour is more delicate than other black truffles and it’s similar to the taste of porcini.
**HOOKED TRUFFLE **Picked from 1st of October till 31 December its the smallest and darkest, the smell is very strong but more pleasent and its flavour more pronounced.
All were available in a variety of products ranging from 5 to 500 euro’s.
How to preserve a Truffle? Well in the fridge or in a plastic box, wrapped in paper and maximal 10 days. You have change the paper every day to preserve the truffle from the humidity and that will help to let it live longer and stay healthy.

We bought the parmigiano and fungi tartufi paste.
This was such a nice experience and for foodies like me and @cvds this is a must see and taste while we were in Italy last week for the cruise holiday. I will blog moord about what we all saw and did while we were away only i wanted to share this one today, and now i am off making dinner myself. I got Hungry from making this post.

Yes you may dear ! I bought the paste because the real truffle was to expensive
I have never bought any and have only experienced truffles at restaurants.
This looks like a dream for some people I know ^^ .. I need to get some sweets now ;)
