Steemit Sandwich Contest Week #84 | Apple Smoked Brisket Pocket
Good day my Steemit Sandwich friends! I hope you’re having a great weekend! So glad to see you all as it’s week #84 of @jaybirds Steemit Sandwich Contest! Big thanks to our host the Sandwich King @jaybird and our sponsor @llfarms! I think I can speak for all of us to say we are so thankful for this weekly challenge. He sets a pretty high bar for all of us with his daily sandwich combos and stellar sense of humor; thanks for all you do @jaybird!
As I mentioned yesterday, the Birds nest has been smokin all week! Salmon, Beef Brisket, Smoked Pork to name a few! We had friends over and weren’t sure what we wanted to serve so that meant we had to experiment!
You know what that means! We have a smokin-good leftover sandwich for this week’s Steemit Sandwich Contest! Let’s get started!
An Apple Smoked Brisket Pocket
Pocket stuffings
- Apple Smoked Beef Brisket
- Bird's Spicy Barbeque Sauce
- Fresh Onions
- Fresh Mushrooms
- Shredded Cheddar/Jack Cheese
- Sriracha Sauce
Flathead Pocket Dough
- Almond Flour
- Cream Cheese
- Mozzarella Cheese
- Egg
- Rosemary
- Oregano
- Sea Salt
That Smoked Brisket…
was calling my name! I sliced a few slices, very thin now. I have a very bad habit of putting too much in these little pockets. Then it’s like a volcano erupting when I cut it!
Slice…
The onion and mushrooms and sauté those in a little Olive Oil until the onions are translucent and golden.
Oh yes…
the sauce, don’t forget that secret barbeque sauce. Honey, garlic, cayenne, spicy stuff!
And last…
but not least, the dough! We really love this dough, it’s so versatile. It is grain free, and fits right in for those of you following the keto diet plan. We like it because you don’t feel stuffed after you eat it unlike many pizza doughs! Mix the almond flour with the mozzarella cheese, add the cream cheese. Microwave or heat the mixture for 1 ½ minutes, stir thoroughly; add the spices and the egg. Onto parchment paper, and roll it out with your favorite rolling pin!
Cut out…
little disks and layer the sauce, beef, mushrooms and onions. Top with a sprinkle of cheese. Now fold these little guys in half and seal the edges.
Into the oven…
for about 20 minutes at 350 degrees. Bake until they are golden brown and crispy!
Add a little dippin sauce on the side and Voila!
My master smoker, Mr. Bird was chirping with joy! One happy songbird I must say! He sliced into that little pocket before I knew it!

Okay wow I love these for a number of reasons!
(1) I’ve been cooking with mushrooms a lot more and I love the extra flavor they add
(2) I already have almond flower on hand
(3) I am following the Keto lifestyle and need more meal ideas
(4) You can change these up and add a variety of different meats and veggies inside
