Steemit Iron Chef 2018 Act 02 Round 09 - Fruit Salad Islands

I cannot think of many people who will turn up their noses at a bowl of fresh fruit salad, especially in the heat of summer.

As my regular steemit friends know, I live in South Africa, the land of sunny skies; so even though we're in the midst of winter, we still have plenty of sunshine and an abundance of fruit available, so we eat fruit salad right through the year - awesome as a breakfast meal with muesli and yogurt or as dessert with cream, custard or ice cream.

For this week's Steemit Iron Chef 2018 Act 02 Round 09 - Theme: Fruit Salad which is the contest arranged by an awesome steemian named @progressivechef, currently working as an executive chef on the tropical island of Mauritius, I made Fruit Salad Islands.

Of course we are limited to winter fruits like apples, pears, oranges and thankfully the faithful stand-by's that bless us throughout the year - kiwifruit, strawberries and bananas - plenty of the latter here in Kwazulu Natal ;)
All these fruits were diced and placed into molds, then set in a soft wobbly jelly made with orange juice and gelatin and served with a luscious passion fruit and mango coulis. Beautiful fruity colours shone through the wobbly jelly.

Ingredients required:

  • 1 large Granny Smith Apple - diced with skin on
  • 1 large Pear - diced
  • 1 Orange - sliced plus 300ml freshly squeezed Orange Juice
  • 2-3 Kiwifruit - sliced and diced
  • 1 punnet Strawberries - diced
  • 3-4 Bananas - sliced
  • 4-5 Granadillas (Passionfruit) - 150ml Pulp
  • 1-2 Mangoes - 150ml Mango Pulp
  • 2-3 teaspoons Gelatin

Make up the orange jelly by leaving the gelatin in a little water to sponge.
Heat orange juice and add gelatin, stirring to dissolve.

Make up the coulis by blending the mango and passion fruit pulp.

Place diced fruit into molds.

Pour orange & gelatin over to cover fruit and refrigerate till set.

Extra Fruit salad placed into pretty glass bowl for seconds!

Invert a moistened cold platter over top of molds, turn over to unmold each little island. Carefully move to serving plates and pour coulis around to form a delicious fruity ocean around the little colourful islands.

Almost forgot to take the proof photo so quickly assembled another little island with fruit from the large bowl.

I always love the recipes that you prepare. That piece of strawberry caught my eye and me and my daughter loves strawberries. What an eye candy of a fruit salad dessert. It looks so good!

Hey that's a nice trick! To have the fruits in gelatin is a really good idea! ... the only thing, I always like to have fruit salad with ice cream....
