Contest: Recipe of the Day. Week No.54 / Different Kinds Of Pancakes.

Today, I’m showing you a slightly different kind of pancakes that are not only delicious but also healthier. They don’t contain milk, as I don’t consume animal products except for eggs. So, if any of you have a dairy intolerance, these pancakes are perfect and in no way inferior to traditional ones. Since my friends know what I don’t eat, they always take that into account when we have gatherings. The idea for spinach pancakes was mine, but the execution was done by a friend who was quite nervous about how they would turn out without milk. Still, she wanted to challenge herself.

Ingredients:

3 eggs
Two generous handfuls of baby spinach
1 tablespoon oat bran (optional, if you don’t like it)
Salt
Black pepper

Preparation:

The process is very simple. Beat the eggs, add the baby spinach, and blend until you get a smooth green mixture. Then, add the oat bran, salt, and black pepper. Heat a pan with a little olive oil and pour in a medium-sized ladle of the mixture, spreading it evenly to make a thin and even pancake. Cook on low heat for about 2-3 minutes per side.

Without a doubt, my pancake takes the crown! it’s like a fresh, colorful garden on a plate, loaded with tomatoes, cucumbers, onion, radishes, arugula, olives, and avocado. What makes it even better? There are absolutely no boundaries to creativity!

My friends were really happy with the taste, even though they initially found the recipe a bit unusual. I just want to add - whenever you get the chance, push past prejudices and fears and embrace the new. I don’t just mean with food, but with all the opportunities and situations life throws our way. That’s how we grow and move forward.
