Tomato Soup with Bell Peppers and Almonds

This soup is not only tasty and easy to prepare, but also healthy. The amount of ingredients in the recipe will provide an excellent dinner for several people or for several days.

Ingredients


  • Olive oil 2 tbsp. spoons
  • Bell peppers 2 pieces
  • Garlic 4 cloves
  • Italian herbs ½ teaspoon
  • Dried thyme ½ teaspoon
  • Canned tomatoes 1½ kg
  • Ground Almonds without Peel ¼ cup

Cooking


  1. Heat olive oil in a large frying pan and sauté bell pepper, garlic and spices for 2-3 minutes or until the garlic turns golden.

2 ․ Carefully add the tomatoes, reducing the heat, bring the mass to a boil and simmer for 3-4 minutes.

3 ․ Grind the finished soup in a blender until smooth and serve, sprinkled with almonds.
