Egg Salad

I just came in from the chicken coop with today's collection of eggs. I got more than a dozen. That is a lot of eggs for basically two people.
I used to give a lot of eggs to my children. But now, two of them have their own chickens and don't need any from me.
It probably is time to sell some again since I have way more hens than I had planned on. Last year, I had a bunch of broody chickens who were hiding until they showed up again with their babies.
One of the drawbacks if you let them roam the yard. And even though my recent garden pictures look like there is not much going on - in a couple of months, we are looking at a green wilderness again.
And chickens are excellent at playing hide and seek!!
So, we had lots of chicks which now are hens and happily lay an egg a day.
I do trade the eggs for things I want at the backyard fruit exchanges, but still, we have a lot and have to come up with interesting ways to eat them.
This egg salad is a recipe my son really likes.

Recipe

Boil eggs - we did one dozen
Peel and cut into big chunks.
Green onions, chopped fine.
Celery, sliced into thin slices.
Salt, Pepper, and mayonnaise.
Now, these are the 2 ingredients which make this salad delicious.
Fresh Dill.
Horseradish.

Mix all together and adjust ingredients to your taste. We like it best with a lot of fresh dill and a good amount of horseradish.

Serve on homemade sourdough bread, with crackers or any bread of your choice.

It is also delicious as a topper on a green salad.

this looks spectacular no doubts it Delicious! having too much food is a beautiful problem to have! Maybe try pickling some of the eggs! They are such a wonderful snack!

Is free chickens from broody hens really a drawback? 😀😀😀

What type of hens did you have that hatched their own?

I have a backyard mixed flock. This batch right now is mostly from either eggs I bought from a breeder who does only heritage birds. Once they go through their first molt, she puts all of them in a yard with assorted roosters she didn't sell and people buy the eggs for either eating or to hatch their own. I did an incubating class and hatched out 40. And the rest is from those making babies.
It is only a problem when you have too many roosters and your neighbors turn you in to animal controll 😡 And I am really bad at slaughtering. I can do everything after the dispatch - but not the deed itself...

Yeah, slaughtering is not fun. We don't have chickens now but I definitely prefer laying hens to broilers for this reason.

Heritage birds are good for both - eggs and meat. And when you have chicks hatching - 50 % are boys and they need to go into the pot eventually :)

Hmmm, going to have to try the horseradish... don't think I've ever had it with that! We have a lot and need to start selling them too... LOL. How do they hide long enough to hatch out chicks without getting snatched up by a wild animal??? Oh my! Guineas I can see, but chickens?

We pretty much live in a city but still do have wildlife. I lost 14 hens one morning to - I don't know -By the time I got to the coop, my dogs had scared whoever with their barking... and I do worry when I can't find them since, as you know, everyone loves to eat chickens. The yard is basically surrounded by 6-foot fences and/or walls and houses all around it now. Before, we had an empty lot behind us and coyotees would come into the yard.
The mommies got lucky...

I wouldn't have thought to add horseradish to egg salad! If I am feeling brave some day, I will give it a try.

If you don't like it very spicey - they have a mild version of horseradish available :)

This is like the one I make. The horseradish gives it that little extra kick. And what's a salad without fresh dill? And on fresh bread too! Now I am hungry...
