First Yacon Harvest
You wouldn't say by the looks of it, but these edible tubers from the Yacon plant (also called Peruvian Groundapple) are extremely delicious. They are very juicy and taste like apple.
The tubers from the first plant have been harvested. I really underestimated the job of getting them out of their container without damaging them.
1 more plant to go and we'll have a supply that will last us through winter 💜🌱🥔
