Ruth Cooks: Cold Pasta & Tuna Dish
Hey there! After my "good wife's pizza" from yesterday, today's dish is something lighter and a lot simpler.
I was planning on making a healthy lentil soup today, but some errands came up and I didn't have enough time to cook. Since I didn't want my husband to die from starvation I had to prepare something quick, so I made this very simple dish with very few ingredients:
Ingredients
- a packet of fusilli
- 2 cans of smoked tuna
- 1 small can of corn
- mayonnaise
- salt
- pepper
- dried basil
- dried peppermint
First, you need to cook your pasta and strain it well. Then, put the tuna, corn and pasta in a big bowl or pot, add as much mayonnaise as you like (I used about 4-5 tbs of light mayo) and start mixing. Some seasoning for extra flavor and your super quick lunch is ready in less than 30 minutes!
Serve cold with some extra salad (if you have the time to prepare one - lol)...
And add some extra basil and peppermint if you enjoy stronger flavors like me!
