The most amazing truffle mac and cheese!

If you have never had Truffle Mac and Cheese, you don't know what you are missing! It takes boring Mac and Cheese and adds a wonderful truffle kick on your taste buds.

Most Truffle Mac and cheese recipes add the truffle flavor in the form of truffle oil or truffle butter. However, I have been saving this Truffle cheese I bought in Amsterdam earlier this year. This cheese was aromatic and delicious all by itself.

As I looked at this beautiful and fragrant cheese, I wondered what recipe I can enhance by using it. I decided to use it in my recipe for Mac and cheese which I was making for Thanksgiving this year. The result was incredible! It turned regular mac and cheese into a fancy delectable mac and cheese. 😉 Here's the recipe below.

INGREDIENTS:

  • 8 tablespoons unsalted butter, plus more to grease the baking dish
  • 1 1/2 cup panko bread crumbs
  • 18 oz extra-sharp Cheddar, grated
  • 18 oz Truffle cheese, grated
  • 2 pound elbow macaroni
  • 4 cups whole milk
  • 3 1/2 tablespoons all-purpose flour
  • 2 teaspoons dry mustard
  • 1 1/2 teaspoon salt
  • 1 teaspoon black pepper

DIRECTIONS:

** 1. Preheat the oven to 350°F. Lightly butter a 4 quart chafing pan or any other comparable baking dish. **

** 2. In a small saucepan over medium heat, melt 4 tablespoons of the butter. Place the panko bread crumbs in a small bowl, drizzle with the melted butter, and toss to combine. Add a handful of the grated cheese to the bowl, toss to combine, and set aside. **

** 3. In a large pot of boiling water, add salt and cook the elbow macaroni until al dente. Drain the noodles, without rinsing, then return them to the pot they were cooked in. **

** 4. In a small saucepan over medium heat, heat the milk until it starts to steam and form tiny bubbles around its edges. Do not let the milk come to a boil. Remove from the heat. **

** 5. In a medium saucepan over medium heat, melt the remaining 4 tablespoons of butter. Add the flour and use a wooden spoon to stir the mixture together. Keep scraping the bottom of the pan to prevent burning, until it starts to turn a light brown color, about 3 minutes. **

** 6. Slowly add the warm milk and stir constantly until the sauce thickens, about 3 minutes. **

** 7. Remove from heat and stir in the dry mustard, salt, and pepper. Add the remaining grated cheese, and truffle cheese and stir until it's completely melted. The truffle cheese in the picture is cubed. I strongly advise to grate the truffle cheese. It makes the melting process easier. Adjust the seasoning to taste. **

The finished cheese mixture... yummy!

** 8. Pour the cheese sauce over the cooked elbow macaroni and gently stir to coat the noodles in the sauce. **

** 9. Pour the macaroni and cheese into the prepared baking dish and top with the panko-cheese mixture. **

** 10. Bake until light golden brown and bubbling, about 30 minutes. Serve hot. **
