How to prepare your delicious Afang soup (cook with nora)

Today we are going to learn about the Nigerian triditional soup call Afang soup.
Afang soup, this is a native soup to the ibibios, people of Akwa Ibom and the efiks, people of Cross River states of Nigeria. This is one soup that is enjoyed by all Nigerians. It is very very nutritious as the soup consists mainly of vegetables. Afang Soup is prepared with a generous quantity of Water leaves and the wild herbal Afang leaves.
Ingredients used in preparing Afang Soup.

How to prepare Afang Soup.
First of all you wash, drain and slice the water leaves into tiny pieces. Then you grind or pound the sliced Afang leaves. You can get all this done in Nigerian markets, the sellers have machine they used in grinding these leaves. If you have a blender you can grind it yourself at home.
Cut the onions into tiny pieces and grind the pepper and crayfish.
Seasoning the beef, Kanda, stockfish, dryfish, Periwinkles and Snails with the diced onions pepper and seasoning cubes in a very small quantity of water. When its done, add the palm oil, crayfish and pepper. Once it starts boiling, add the afang leaves, water leaves. When you notice the Afang leaves have softened and the water has dried up a bit, add salt to taste and leave to simmer for about 5 minutes. Don't cook it for a longer time than that, it's best serve while the Afang leave is still fresh. Then your Afang soup is ready!
You can enjoy your afang soup with Garri (Eba), Semolina Fufu, Amala, Cassava Fufu or Pounded Yam
