Asparagus, radish and celery root potage recipe
This soup had both a complex and homely taste.
Ingredients
- Asparagus (see photo for quantity)
- Daikon radish (or regular radish)
- Potato
- Onion
- Celery root
- Turmeric (1 tablespoon)
- Coconut oil (2 tablespoon)
- Garlic (2 cloves, chopped finely)
- Ginger (about 1cm of medium size ginger root, chopped finely).
- Nutritional yeast (optional)
- Dried sage or oregano
Preparation
Cut the vegetables, quantity similar to that shown on the photo.
Warm two tablespoons of coconut oil in large pot, then add turmeric and ginger. After a minute, add garlic and vegetables. Cook for about 6 minutes at medium heat.
Add water to submerge the vegetables. If you want a thick potage, it's better to add not-enough water than too much, as you can always add more water later. Add herb(s).
When cooled, blend. You may serve with fine slices of radish.
Simple, wasn't it? Also, umami and delicious!
I like it. Sad that where i live, asparagus are very expensive. But i make it someday.

Thanks! You can always replace the asparagus with another green vegetable, ie Brussel sprouts, broccoli.
