Pancakes With Blueberries & Pecan Nuts Topped With Agave/Strawberry Syrup

Today, I am sending this entry to Qurator´s food challenge... TASTY TUESDAY #98. Pancakes as desserts are very simple, quick and easy to prepare. Munch these sweets for your afternoon tea. They are fluffy and delish, scrumptious to look at especially when they are garnished with berries, nuts.
In this recipe edition, I topped the pancakes with Blueberries, pecan nuts and Agave/Strawberry syrup. The most common syrup for pancakes is the Maple syrup, others use Corn syrup. I do not have those syrup in my pantry, so I used the Agave and the strawberry syrup. I am inviting you to make this easy peasy but delish dessert.
Pancakes With Blueberries And Pecan Nuts
Ingredients:
2 Eggs
2 Tbs sugar or 2 Tbsp Stevia powder
1 pinch of salt
210 ml milk
210 g flour
1 tsp Baking powder
Oil/ Butter for frying
Berries for toppings (here I used pecan nuts)
Agave/ Strawberry syrup to sprinkle the pancakes
Preparations:
1…With an electric mixer, beat the eggs until creamy, slowly adding the sugar, then milk, stir in salt, add flour and baking soda , mix well until a smooth batter is achieved. Let the batter rest for around 10 minutes for the baking powder to activate making the pancakes become fluffy.
2… Heat a non-sticking pan under medium heat and add 1 teaspoon oil or butter. Add ½ cup batter to the pan and fry under medium heat. When the pancake is formed and the top gets dry, fry the pancake from the other side until golden brown in color.
3… Arrange 2 or 3 pancakes on top of each other, garnish with berries and nuts. Sprinkle the top with Agave or Maple syrup and serve hot.
