White Mushrooms w/ Asparagus & Grape Tomatoes
Ingredients:
- 1/2 lb asparagus;
- 6 grape tomatoes (whole);
- 1/2 lb white mushrooms (sliced);
- 2 garlic cloves;
- coconut oil for frying;
- salt and pepper to taste.
Directions:
Heat coconut oil at a medium heat and start off with frying asparagus to a desired level of tenderness, I prefer it slightly charred, but still somewhat crunchy inside, not totally soft and mushy. Then add in the mushrooms, continue cooking until done, (remove the asparagus off the skillet if needed). Next, thrown in sliced garlic and grape tomatoes and cook for a few more minutes.
And that is basically it. Extremely simple yet delicious dinner or lunch idea all in one skillet.
I like sautéed asparagus, steamed, in all the ways that prepare them also that look very nice the dish there is a healthy and rich food that's what I love about this dish, that looks very tasty
