Quinoa with Red Beans & Mushrooms - Recipe #4

Vegenoobs strike again! How are you doing, eaters? We are here again to provoke you to cook more plant-based food because believe us - you will LOVE it!

INGREDIENTS:

230g dried red beans
250g baby button mushrooms
200g quinoa
125g sweetcorn
1/2 brown onion
2 cloves of garlic
2 tbsp of extra virgin olive oil
2 tsp of red paprika
2 tsp of flax seeds

PREPARATION TIME:

15 minutes

COOKING TIME:

25 minutes

So, this meal is completely vegan and suitable for all of you out there! Isn't that great?

You are going to need a wok pan and a pot. First, take out quinoa seeds and put them aside. You will start cooking them after you prepare the rest of the food.

In this case, we used baby button mushrooms, but feel free to use any mushrooms you prefer.

Now, you will take a can of red beans and dry them so the juice leaks out. After they have been dried, put them aside.

Rip off 2 cloves of garlic and use the garlic crusher to make tiny pieces which you will later use in this meal.

Again, as I mentioned before, you don't have to strictly follow the recipe - feel free to use some other sort of onion. We used brown onion; half of it, actually. Take a sharp knife and chop it up to tiny pieces.

Open up a can of sweetcorn and dry it the same way you did with the beans. Put them aside.

Here's what we have at the moment. Very colorful, isn't it? That's the thing we like the most about plant-based food. Anyway, you're almost halfway there, keep going!

You will now slice the mushrooms into smaller pieces, like the photo shows. Now would be the right time to bring quinoa from the beginning of the recipe to the boil. Make sure you use the correct amount of water (double the amount of quinoa you are cooking).

Put 2 tablespoons of extra virgin olive oil in the wok pan and light the fire on the stove. Leave it for a few minutes until it heats up.

You will first put the sliced onion into the pan and simmer it for a few minutes. After that, start adding the mushrooms. Mushrooms will have to be cooked alone for a few minutes so they let out all the water they contain. Next step is adding the rest of the ingredients - sweetcorn and red beans first. Mix it all up and leave it cooking in medium heat, stirring occasionally.

Add the red paprika and mix it all up again.

After a few minutes, mix in the flax seeds.

Meanwhile, the quinoa is done and you need to dry it. Add it to the mix, stir everything and leave it cooking for a few more minutes, stirring every 5-10 seconds.

Voilà! This is your meal completely done! Bravo, we congratulate you! Wasn't so difficult, was it?

Now, although there are quite a few ingredients on the list, this is a very straightforward recipe and pretty easy to make even for beginners.

This meal serves 3 people and each of them will get about 250 kcal, 6g of fat, 14g of protein and 35g of carbs. What isn't mentioned here is about a dozen different vitamins and a whole lot of fiber you will put into your body! That's a really healthy meal.

It is also great as a pre-workout meal (as in a couple of hours before workout) because it is very energetic and it will provide you with badly needed boost at the most difficult times.

Here's a couple of tips if you stayed with us all the way until the end:

  1. As a simple salad, you can grate some fresh cabbage and sprinkle some pumpkin oil on it. You will get a lot of additional vitamins and your meal will be even tastier!
  2. If you follow everything in this recipe, there's a big possibility that you will be able to serve even 4 people if you are light eaters.
  3. When it's all added up, the average cost of this meal is about 30 Croatian kunas (approx. €4/$4). That makes a cost of a portion at about €1,50/$1,50. Can you believe it? And they say being vegan is expensive!

@arisinho All foods prepared with natural vegetables are exquisite and excellent for our proper diet. I love the texture of quinoa and the excellent red beans when they are already cooked, they all look so healthy with bright colors because of how fresh and healthy they are. The food isn't only healthy, it looks great in pictures too And I believe it tastes delicious as well! I am not much of a beans person, so I probably will leave that out or maybe substitute it with something else (have any idea of what can be used as a substitute?).

I have heard a lot of good benefit of Quinoa, but never tried it. Though looking at the recipes, it looks like a healthy food. As I am allergic to Mushrooms is there any other alternative which can go along with Quinoa and Beans?

Quinoa is the food full of amino acids and high in protein, the taste is amazing; if you like rice you will love quinoa! As a substitute for mushrooms we would definitely suggest courgettes! The flavor should add in nicely. :) Thanks for your comment.

Though I didn't know about courgettes, In India it is called as zucchini. And we do use it in our vegetables.

I have never eaten red beans with mushrooms, i will try this glorious combinatión of food, the quinoa i think is same to sesame seed, but i will try to combine this, to enjoy a flavor like this, thank so much for learn how to enjoy it.
