How to make syrup out of birch

First of all, this is not drugs, Its
Birch syrup :)

To make birch syrup you must boil the water until you have a sugar content of 60-65%. If the sugar content is less than 60%, the syrup will become thin-flowing and the sugar content above 66% you have the risk of the sugar crystallizing.

1 liter of birch water contains approx. 13 grams of sugar, then with a little calculation , 20 liters will give about half a liter of finished syrup.

When you approach the end of the cooking, things go fast and it's important to be careful not to cook dry. At the end, therefore, you need to turn down the heat and take samples to see if the syrup is finished.

How does it taste like?

IT taste like sugar, with A rase of nature, and A bit caramel. Its Good :)
