Sprouted Garlic - More Beneficial

Hey wait! Don’t do it! Don’t throw that garlic out! It isn’t bad!


I sure wish I would have known this before I threw out so many sprouted garlic cloves. Usually when food starts to look weird or strange things start to grow out of them, into the garbage they go. I am very particular and picky when it comes to how our food looks.

Last week while cooking I reached for the garlic and this is what I found. More stem like things growing out of my cloves. This time instead of tossing them right away I got curious. I thought what if there is something beneficial to this rare growth? What if it doesn’t mean the garlic has gone bad or expired? So I set the sprouted ones aside (and took photos of them for this post 😁) until I researched and cooked with the normal ones.

Sprouted Garlic is a Superfood!

During a recent study published in the ACS Journal of Agriculture and Food Chemistry it was found that sprouted garlic which are older garlic bulbs with shoots sprouted from their cloves, has even more antioxidant activity than the younger ones. So we can presume that sprouting garlic is not getting spoiled it’s just ageing. It develops it’s nutritional quality with age. If you see dark spots on garlic those are a sign that it is getting spoilt.

In the article researcher Jong-Sang Kim, PhD, explained,

Plants are very susceptible to attack from bacteria, viruses, and insects during sprouting. This causes them to produce a variety of chemicals called phytoalexins to defend themselves. Most of these are toxic to microorganisms and insects, but beneficial to human health.

They found that garlic sprouted for five days had higher antioxidant activity than fresher bulbs and it had different metabolites, which suggests it also makes different substances. Extracts from this garlic protected cells in a laboratory dish from certain types of damage. It was concluded that sprouting may be a useful way to improve the antioxidant potential of garlic.

Sprouted garlic enhances the already amazing benefits of raw garlic. It boosts immunity, cardiovascular health protection, cancer fighting abilities, slowing down the ageing process, blood pressure control, and the effectiveness against bacteria, fungi, parasites and viruses.

So maybe it’s not a bad idea to let your garlic sit in your pantry a little longer than normal to get these enhanced benefits. The next time you see shoots coming up out of your garlic don’t panic but be excited that you will get these added boosts to your health!

How fascinating! I admit it - I usually throw out the sprouting cloves. Yet it really makes sense. A few years ago I started growing my own garlic. It was so easy - I just bought an organic garlic bulb and planted each clove about six to eight inches deep in the garden. I planted them in autumn and left them alone until spring, when I was able to harvest the most delicious garlic bulbs ever! So I suppose sprouting is just that new growth beginning.

Isn’t it fascinating?!! I think I’m going to start growing my own garlic too. I’ve heard before it was pretty easy. So do you yield quite a bit?

Each clove grew one bulb, and I don't think any of them failed. I then grew more using cloves from one of the bulbs that had grown. I did it for three years, and then it failed - maybe I needed to rotate the crop to give the soil a chance to rest.
Unfortunately after that I was made redundant and started to run my own business, which took every moment of my time and ultimately failed :/ My garden got really overgrown. I'm hoping to get it all sorted out and grow garlic again though. It really was the best garlic I've ever tasted!

Huh... I didn't know this! I always just threw them out... normally if they are sprouting, they are a bit withered on the white parts. Maybe I should just keep them and cook them....

Yep...I think many of us do. I think that’s a good idea to use them to cook with!

Ah, it's fascinating that garlic in TRANSMUTED form is often more beneficial than the other form! Did you see my black garlic post? Mine's all sprouting in the colder weather so it's into the soil with it! I'm also making a fire cider, well, I have made it, just patiently waiting for it to brew!

Okay so I just looked up what fire cider is! Wow never heard of this either . It seems it works well to help flush inflammation from the body. From the name and looking at the ingredients I can imagine how not or spicy it is . So when you drink it do you dilute it or just do so straight?

Fire cider is only hot if you put chiilis in it. It is fun to give to unsuspecting friends 🤣🤣🤣😱😱😱 ... but doesn't have to be super hot. I drink it either as shot or in water, diluted, or as a dressing. It's easy to make!! My last lot had mustard seeds, pepper, chiilis, turmeric, ginger, garlic, onion, lemon, parsley, thyme, rosemary.
