Yes, you can grow potatoes from the peelings, as long as the peels have "eyes".
We compost everything including cardboard egg cartons. Now our rabbits and chickens are vying for the scraps as well.
I try to have a new raised bed on the go all the time so I can put all my kitchen waste in that at the bottom. Then when it reaches a certain level I start adding leaves etc and then finally a layer of soil or compost to fill the bed ready for planting.

Hmmmm, that's actually a really good idea, I'm going to try that.. I wonder if my neighbors need their scraps lol.
