Roasted duck spice bacem
Ingredients :
1 duck (cut into chunks)
2 tbsp of tamarind water
2 cups of coconut water
1 orange juice (squeeze the water)
Ground spices :
1 lemongrass (crushing)
4 cm galangal (crushing)
4 cm ginger (crushing)
10 cloves of onion (mashed)
6 cloves of garlic (puree)
5 pieces of cayenne pepper (puree)
Sweet soy sauce (to taste)
Salt to taste)
Sugar (to taste)
Powdered chicken broth (to taste)
How to make :
Spread duck meat with tamarind juice and lime juice. Let stand for about 30 minutes then wash.
put the duck meat into the pan.
Add the spices that have been mashed, galangal, lemongrass, ginger and coconut water.
Boil duck meat until really tender and ripe.
Boil until the coconut water dries.
Pick up the mature duck and drain it.
prepare sweet soy sauce and then coat the duck with soy sauce to taste then burn until the aroma is fragrant.
