The biggest festival of the Bengali Hindus. It is the time of the year to go around , meet relatives, friends and indulge in some long never ending conversations and pamper your taste buds.
As I am currently not in India, I don’t always get fresh Indian veggies and fresh water fishes. But I try to make the best use of what ever I get . Also as I put in a lot of importance to healthy eating I try to cook for my self and my husband and prefer to eat at home.
It is very expensive to get help so we do all the house hold work ourselves. I try to eat traditional Indian dishes but with a twist to use as less pots and pans as possible. I also sometimes use olive oil and replace sunflower or coconut oil.
So, here is my of making Khichuri, with yellow mung dal . I have used the left over veggies from my fridge. You may use your own.

Ingredients:

Small red potatoes
Pointed gourd (potol)
Cauliflower
Tomatoes
You may add what ever vegetable is there in your fridge. However it is better not to use egg plants.
Yellow Mung dal.
Rice. Gobindo bhog is better. You may use any, but not basmati.

Spices:

Paanch phoron : Mixture of five spices. If you dont know what is it then you may use cumin seeds instead. (https://en.wikipedia.org/wiki/Panch_phoron)
Turmeric
MDH vegetable masala: If you don’t have the vegetable masala then use Cumin powder and coriander powder.
Garam Masala

Let us move on to the steps now:

Do not worry if you don't get it. I have added the video. The video is not professionally done, but serves the purpose. :P

Step 1:
Take a big pot or pressure cooker and wait till it is warm.

Step 2:
Take one cup of yellow mung dal and dry roast it.
Note: Remember to stir continuously otherwise the lentil will burn.

Step 2: When the lentils are on the verge of getting brown and starts to smell good put water in the pan

Step 3: Wash the lentils twice till you think they are clean.

Step 4: Put the pan back in the oven in the medium heat and wait for the water to dry off.

Step 5: Empty a space in the middle of the pan by removing the lentils to the side and pore olive oil.

Step 6: Mix the lentils to the oil and again empty a space in the middle of the pan by removing the lentils to the side and put oil. After 1 min add panch phoron. If you don’t have , add whole cumin seeds and mix everything well.

Step 7: Now put all the chopped veggies one by one in the pan. Now add the mix vegetable masala (I used MDH vegetable masala) and turmeric . If you don’t have MDH vegetable masala, use cumin and coriander powder and mix well.

Step 8: Add one cup of rice and stir well.

Step 9:Add water till all the veggies are immersed in water and wait till everything boils up.

Step 10: Cover the lid.
If you are using pressure cooking wait for 15 min. If you are using pan then wait for 8 mins and stirl cover again and wait for 8 mins and stir and repeat till the rice and lentil are boiled.

Step 11: Add Garam masala. Serve hot with a spoon full of ghee.
Note: You can serve it with Coriander chutney , papad, or mixed veggies. If you are a non vegetarian then you fish fry or chicken pokoras will add to the dish.
