Haidilao 3.

Up until quite recently, my own hot pots tended to be quite neutral in taste. I would avoid having anything spicy, and would prefer a fairly plain soup base to try maximise the default taste of the meat.

Service at this hot pot place is second to none. For those that recognise it, and I guess for those that don't, this is Haidilao. It is the largest chain of hot pot restaurants in all of China and it has garnered a reputation for having some of the best customer service as well as availability — night snackers beware. Haidilao is a monster of a restaurant chain and has gained a following even outside of China, in the US and soon to be UK.
