Wild Food: Dandelion Quiche with Farm Fresh Goat Cheese, Caramelized Onions and Dried Plums

In this quiche I used all parts of the dandelion: Roots, leaves, and flowering stalk.

When I was asked to help weed out the farm's greenhouse before putting the beds to sleep, I excitedly grabbed the garden fork because one farmer's weeds are another farmer's bounty!

The roots were first fried into caramelizing onions from a local farm

followed by the leaves until well wilted and then added into a quiche base which included old homemade yogurt and goat's milk from a friend's farm.

I scattered chopped chunks of dried plums and chopped toasted walnuts across the bottom of the pie crust

of which I have many from an abundant Italian plum harvest from this farm, and walnuts harvested free from a friend for sharing 50% of my harvest, earlier this fall.

As for the plums: think sun dried tomatoes

(except they are plums and amazing in their own right!)

The mixture was poured into the crust over the plums and walnuts, baked and flower petals sprinkled on top. I'm not going to bother bragging about the picky palates that devoured these lovely weeds.

This is great. I picked dandelion and put it in the freezer and I dried some! Wonder if they would work? Thanks

Yes totally! Frozen dandelion would just need to be thawed. I like dried dandelion roots for teas and infusions, you could certainly add it to soups and stews. Perhaps you could re-hydrate dried dandelion root by soaking it in a small amount of water and then cooking it in a quiche. I think you could use dried dandelion leaves in this dish as it would re-hydrate some in the baking, but you might also soak them for a short time first. I have dried leaves from other plants that I like to use in soups and stews as well. I'd like to hear your results if you try it!

I’ve found so many amazing recipies using mostly foraged and homegrown ingredients in the last few days. This one I must try asap. I love dandelions! I appriciate that you used the whole plant, so none goes to waste!

When I try to get creative or just try to wing it in the kitchen it is a disaster. And it’s hard to find good recipes for wild edibles, so I truely appriciate those of you willing to share!

You've dove d great job at making my mouth water! Have you tried something similar with burdock? We grew some japanese Gobo (cultivated burdock) and it would be great in a dish like this.

:) No I have not but that's a great idea! I love burdock but have not found enough for significant usage this year. This fall I was able to harvest enough to make a 1 qt tincture, and I am saving seeds to grow burdock in my future garden! Thanks for the suggestion. I will have to make a note to try Japanese Gobo as well as I am not familiar with it yet.

I used to love dandelions. They don't grow here at the beach 😞
We used to a patch of them on the farm in Canada just so we could forage them.

I'm sorry to hear that.. I wonder what edible weeds are you enjoying that thrive there by the beach?

Quail Grass, Moringa, Katuk leaves, flowers, tender tips and small fruits are all edible. Chaya or tree spinach, Kikisque a tuber, and Yucca. Lots of these are found along road sides and wooded areas.
