Venice || Venecia
Just by looking at that beautiful photo of the city of Venice you will be able to realize why it is the city that fascinates me, one day I would like to travel there, and more to live.
Con tan solo ver esa preciosa foto de la ciudad de Venecia se podran dar cuenta porque es la ciudad que me fascina, algún día me gustaría viajar allá, y más vivir.

Venice arose out of nowhere, on an islet in the middle of an inhospitable lagoon where men and women had sought refuge from the invasions of barbarian peoples from the 5th century on.
Venecia surgió de la nada, en un islote en medio de una laguna inhóspita donde hombres y mujeres habían buscado refugio frente a las invasiones de los pueblos bárbaros a partir del siglo V.
The wonderful Italian city, dubbed "the pearl of the Adriatic", rises on more than 100 islands, linked together by more than 400 bridges. More than 150 canals serve as streets, and almost all of the city's traffic runs on water. To travel the canals, nothing better than a gondola!

Water may be the first thing that catches your eye in Venice when you arrive, but when you get closer you discover a city saturated with art.

If one takes a look inside the Grand Canal palaces donated to Venice, they are filled to the brim with fashionable Prada rafters, samurai armor and the odd dinosaurs.

It is a dish that is prepared in oil and is usually served with polenta.

Elaboration || Elaboración
- With the potatoes, prepare a dry puree, add 1 dl of cream and work together.
Con las patatas, preparar un puré seco, añadir 1 dl de nata y trabajar conjuntamente.
- In addition, cook (blanch) the cod pieces with water for 8 minutes. Remove them, dry them and remove all the thorns, skins, etc. W
hich we will reserve to make the pil pil. Also reserve 4 servings of cod for last.
Aparte, cocer (blanquear) los trozos de bacalao con agua durante 8 minutos. Retirarlos, secarlos y quitarles todas las espinas, pellejos, etc., que reservaremos para confeccionar el pil pil. Reservar también 4 porciones de bacalao para el final.
- Then heat 2.5 dl of oil with 2 cloves of garlic and let them brown. Add the cod at that time and work vigorously until it becomes a fine paste.
A continuación, poner a calentar 2,5 dl de aceite con 2 dientes de ajo y dejar que se doren. Incorporar en ese momento el bacalao y trabajar vigorosamente hasta convertirlo en una pasta fina.
- Remove the cod paste from the heat and mix it with the previously prepared mashed potato. Keep working and add some more oil burned with garlic until it becomes a fine, white and tasty puree. Finally, gently add the whipped cream.
Retirar la pasta de bacalao del fuego y mezclarla con el puré de patata previamente preparado. Seguir trabajando e incorporar algo más de aceite requemado con ajos hasta convertirlo en un puré fino, blanco y gustoso. Por último, añadir suavemente la nata montada.
- With the cod skins, prepare a pil pil (oil and garlic) and add the peas simply blanched and finely mashed.
Con los pellejos del bacalao preparar un pil pil (aceite y ajo) e incorporar los guisantes simplemente blanqueados y hechos puré fino.
- Final and presentation. Place the cod mousse in the center of the plate in the shape of a crown. Napar with the green pil pil and place a few crusts of fried bread around it. Make some rolls with the reserved pieces of cod and place one on each plate. Make a vinaigrette with sherry vinegar, olive oil, salt and chopped chives and trace some lines on the pil pil.
Final y presentación. Colocar la mousse de bacalao en el centro del plato en forma de corona. Napar con el pil pil verde y colocar alrededor unos costrones de pan frito. Hacer unos rollitos con los trozos de bacalao reservados y colocar uno en cada plato. Elaborar una vinagreta con vinagre de Jerez, aceite de oliva, sal y cebollino picado y trazar unas líneas sobre el pil pil.
At the moment I am in Venezuela, but I would very much like to travel to Venice at some point, since it is such a wonderful and charming city, but above all I would like very much more to live there.
En este momento me encuentro en Venezuela, pero me gustaría muchísimo viajar en algún momento a Venecia, ya que es una ciudad tan maravillosa y encantadora, pero sobre todo me gustaría muchísimo mas vivir allá.
